But then on the way ...I was never a huge beet fan. But then on the way to JournalFest a few weeks ago, I stopped at a co-op in town and I had a fabulous beet salad. I don't know how they made it exactly, but it had pomegranate seeds and citrus! Yum. Then at JournalFest they served the beet soup (as mentioned by Laurie above) and it was fabulous. <br /><br />So I'm liking the beets now. One recent tasty I'd discovered is goat cheese. My husband and I have started eating this amazing salad: baby spinach leaves, green pepper, cucumber, tomato, sugar snap peas, mushrooms, other assorted veggies, goat cheese, smoked salmon, and poppyseed dressing.
